What it hasn't done is attract the kind of chef-driven attention that shows up in a national guide. That distinction belongs to a smaller, quieter stretch of road most people drive past without noticing.

Donald Ross Village sits at the intersection of Donald Ross Road, Military Trail, and Central Boulevard, the same Central Boulevard that runs along Old Palm's eastern edge. The anchor is Coolinary and the Parched Pig, chef Tim Lipman's merged concept at 4580 Donald Ross Road. Lipman took two previously separate ideas, a farm-to-table kitchen and a wine-and-cocktail bar, and folded them into one restaurant with a menu that changes constantly and a wine program built by his wife, Jenny Lipman. It's carried a Michelin Guide recommendation since the Guide's first Florida awards recognized Palm Beach County restaurants, alongside a small group of other honorees that included Buccan on Palm Beach Island and Aioli in West Palm Beach.

Next door in the same center is Ela, a curry and cocktails concept from chef Pushkar Marathe, whose modern approach to Indian cuisine has also drawn a James Beard nomination. A third tenant, Mango Mercado, rounds out the trio, also tied to a Michelin-recognized chef. Three kitchens, three distinct cuisines, one small plaza that most people driving Donald Ross Road treat as a pass-through on the way to somewhere else.

Field of Greens, a plant-forward concept built around seasonal, chef-driven bowls and salads, opened a new location at 5320 Donald Ross Road on March 13, 2026, with a second Palm Beach Gardens location following on April 3 at 12485 Northlake Boulevard. The Donald Ross address puts it within the same short run of road as Coolinary, Ela, and Mango Mercado, giving residents a lighter, faster option that didn't exist in that corridor a year ago.

It's a small addition on paper, one restaurant opening in a plaza that already had three others worth knowing. But it changes the shape of a weekday decision. A resident who wants something quick and clean before an evening tee time now has that option two minutes from a table that would otherwise require a reservation.

Why the Border Line Is the Interesting Part
